Picnic Ham Iron Age PorkThis ham is made from the lower shoulder, cured for 14 days and smoked for 12 hours. Similar to hind leg hams although the shoulder aka picnic ham has a little more marbling throughout.

The pork slices are marinated for 90 hours and then slowly roasted for 24 hours until they're perfect jerky
